do mono(car audio) amplifiers play in stereo mode?

by themselves, no. one amp can power one speaker. a pair of them would produce stereo sound so long as the source material (cd, tape, etc.) was recorded in stereo and the preamp is capable of processing a stereo signal.

You definitely need an amplifier. In most cases a 10-1 ratio (speaker to speaker) is needed to balance the sound. In your case since you are using a 1500 watt amplifier, I would suggest 150 watts per speaker up front. (The pioneers should handle that.
